Dr Hopkins grew up in New Zealand and completed a Bachelor of Science (Honours) and a Master of Science by Thesis before moving to Sydney to study medicine. He graduated from Sydney University with Honours in 2007 and undertook his junior medical officer and general surgery training in Central Sydney through RPA and Concord Hospitals.
Dr Hopkins obtained his Fellowship in General Surgery in 2016 and was subsequently accepted onto the highly competitive Australian and New Zealand Gastro-Oesophageal Surgery Association (ANZGOSA) post Fellowship program. He subsequently spent time at Royal North Shore Hospital in Sydney before relocating to the United Kingdom. There, he worked at the Bristol Royal Infirmary followed by the Greater Manchester Oesophago-Gastric Service at Salford Royal NHS Foundation Trust in Manchester. He contributed to the highest-volume oesophago-gastric cancer service in the UK whilst also undertaking bariatric and complex benign cases.
